Raspberry and white chocolate muffins

Serves - 12

300g white chocolate
150g fresh rasps
250g plain flour
1 tbsp baking powder
150g caster sugar
1/2 tsp salt
100g butter
100ml milk
150g Greek yogurt
1 medium egg

 

When not at the karaoke with captain Hook/Adam Ant/Puss in Boots, Bubbles liked nothing better than a lovely raspberry and white chocolate muffin...mmm

 

Method

This one's for you David!

Place 12 muffin cases in a muffin tin.
Preheat oven to 170C.
Chop chocolate into rough chunks. Pick over the raspberries.
Sieve flour, baking powder, sugar and salt into a large bowl.
Melt the butter.
Beat milk, butter, yogurt and egg in a jug. Blend well.
Pour milk mixture into flour till well blended into a stiff batter. Stir in the white chocolate chunks and lightly mix in the raspberries, trying not to break them up too much.
Bake for approx. 30 mins or until well risen and golden.
