Prawn balls with fresh lime

Serves - 2

200g chopped raw prawns
1 tbsp grated ginger
2 cloves garlic, chopped
1 red chili, chopped
1 spring onion, chopped
1 egg, beaten
1 tsp light soy
1 tsp sesame oil
1 tbsp rice wine
1 tbsp cornflour
small handful fresh coriander, chopped
pinch of salt

fresh limes and sweet chilli sauce to serve

Method

Mix all ingredients together.

Heat some groundnut oil in a wok - enough to shallow fry.

Spoon heaped teaspoons of the mixture directly into the oil. Fry for a few minutess on one side then turn over to brown the other side briefly. Drain on kitchen paper and serve with wedges of fresh limes and sweet chilli sauce.

Cook's Tip

You could also use this mixture as a filling for wontons.
