Hot Swiss Trifle

Ingredients:
1 swiss roll
1 x 425g tin apricots in juice, drained
2 tbsp custard powder
2 eggs, separated
1 tbsp caster sugar
600ml milk
100g caster sugar
Method:
Slice the swiss roll and arrange with the fruit in a heatproof dish. Blend the custard powder with the egg yolks, the tbsp sugar and a little of the milk.
Heat the remaining milk and when almost boiling stir into the mixed custard. Return to pan and bring to boil, stirring continuously until thickened. Leave to cool a little and then pour over the swiss roll and fruit.
Whisk egg whites until stiff and fold in the sugar.
Pile the meringue on top of the custard and bake at 180C for 20 mins.
