| 75g gram flour (you can use 50g gram flour and 25g self-raising flour for a lighter bhaji) 1 tsp cumin seeds 1 green chilli, finely chopped 1 tsp ground coriander 1 tsp turmeric 1 tsp salt half a tsp mixed spice 4 tbsp water 1 large onion, thinly sliced 1 small potato, peeled and grated 5 tbsp groundnut oil |

Mix together the flour, cumin, chilli, coriander, turmeric, salt and mixed spice. Stir in the water and beat to a smooth batter. Serve with lemon wedges, yogurt and mint dip, chutneys and with the coriander sprinkled over the top. |
