500g pork spare ribs cut into 6cm pieces 1 tbsp white sesame seeds 1 tbsp groundnut oil 2 spring onions, finely chopped 2 cm piece of ginger, grated 2 cloves garlic, finely chopped 1 tbsp caster sugar 1 tbsp Chinese rice wine or sake 2 tbsp soy sauce 1 tsp sesame oil 1 cup of water |

Spare ribs with sesame. Although ribs are usually associated with Chinese food, this dish is actually based on a Korean recipe. |

Method |

Toast the sesame seeds in a dry pan for a few minutes until they are golden brown. Shake the pan gently so they don't catch. Tip out into a mortar and crush them with the pestle. Set aside. These make a great starter to an Asian meal but are also good served with rice. |
