Vegetable fried rice

Ingredients: 

4 Spring onions, finely chopped
1 Clove garlic, finely chopped
2 tbsp Frozen peas
2 tbsp Sweetcorn
Half a red pepper, finely chopped
2 Cups of cold cooked rice
Salt and white pepper
1 tsp Soy sauce
Groundnut oil for frying
2 Eggs, beaten

Method: 

Heat a wok or large non-stick frying pan and then add the oil. Add the vegetables and stir fry for a few minutes before adding the rice.

Continue to stir fry over a high heat until the rice is heated through. Add the salt and pepper and mix through. Move the rice to one side of the wok or pan and add a little more oil. Add the soy to the beaten egg and pour this into the space in the pan. Stir the egg to cook through before mixing the rice in.

Taste and add more salt or soy if needed.

Just cooked or warm rice will not work in this recipe - it will just go claggy.  If preferred you can cook the egg separately in a small frying pan (as you would an omelette). When cooked, roll it up and slice. Add to the fried rice at the end of cooking and stir through.
